Breakfast-Sandwich Avocado-Egg on Bagel

Ingredients

  • 2 bagels, sliced
  • 1 t. spoon (30 ml) of butter
  • 1 avocado, cut in halves, coreless, and sliced
  • 2 eggs
  • Salt and pepper
  • Sliced or grated cheese
  • 2 leaves of lettuce
  • 1 tomato sliced

Instructions

  1. Start the oven at 350 ° F.
  2. On a cutting board, using a knife, enlarge the hole of 2 half bagels to about 4 cm in diameter.
  3. Melt the butter in a non-stick pan and place the half-bagels, crusted up. Leave them golden about 2 min. Put the other two halves in the toaster.
  4. Return the half-bagels to the pan and break an egg in each of the enlarged holes. Garnish with slices of avocado and sprinkle with cheese.
  5. Bake in the oven for about 5 minutes until the white is cooked and the yolk is still flowing. Wrap the handle of the pan with aluminum foil if it is plastic.
  6. In the meantime, spread the toasted halves with mayonnaise.
  7. Remove the bagels from the oven.
  8. Assemble the sandwiches with lettuce and tomatoes.
