Ingredients

  • 1 chopped onion
  • 2 finely chopped garlic gloves
  • 454 g of lean ground turkey
  • 1 tbsp vegetable oil
  • 3 diced Italian tomatoes
  • 1 tbsp chili powder
  • 1 tsp cumin powder
  • 1 tbsp. dry oregano
  • salt and pepper
  • 3 tbsp. tomato paste
  • 1 tbsp. or cornstarch combine to 2 tbsp. of water
  • 1 c. fresh or frozen corn
  • 1 can of black beans, drained, rinsed
  • 2-3 zucchini spiralized
  • 1 c. mozzarella cheese shredded

Preparation

  1. Heat oil in large skillet over medium heat and add onion, garlic and turkey and cook for 5 min. Season with salt and pepper.
  2. Add diced tomatoes, chili powder, cumin powder and oregano.
  3. Poor tomato paste, stir and add cornstarch diluted in water.
  4. Add corn and black beans. Cook for 5 min.
  5. Add the noodles and cook for another 5 min.
  6. Rectify seasoning and serves in bowl sprinkled with cheese.
