Ingredients
- 1 chopped onion
- 2 finely chopped garlic gloves
- 454 g of lean ground turkey
- 1 tbsp vegetable oil
- 3 diced Italian tomatoes
- 1 tbsp chili powder
- 1 tsp cumin powder
- 1 tbsp. dry oregano
- salt and pepper
- 3 tbsp. tomato paste
- 1 tbsp. or cornstarch combine to 2 tbsp. of water
- 1 c. fresh or frozen corn
- 1 can of black beans, drained, rinsed
- 2-3 zucchini spiralized
- 1 c. mozzarella cheese shredded
Preparation
- Heat oil in large skillet over medium heat and add onion, garlic and turkey and cook for 5 min. Season with salt and pepper.
- Add diced tomatoes, chili powder, cumin powder and oregano.
- Poor tomato paste, stir and add cornstarch diluted in water.
- Add corn and black beans. Cook for 5 min.
- Add the noodles and cook for another 5 min.
- Rectify seasoning and serves in bowl sprinkled with cheese.
